Honey Blueberry Muffins
Healthy Sweetened with Honey!
Ingredients
1 cup oats
1 cup regular flour or
oat flour
1 tsp baking powder
2 tsp. cinnamon
1 Tbsp. vanilla
2 eggs
½ cup milk
1/ 2 cup
South Carolina honey from Honey Top Bees
½ cup melted
coconut oil
2 Tbsp. melted butter
1 cup of blueberries ( Pick your own at
AA Farms in Columbia, SC
)
Directions
In a large bowl, combine all of the dry ingredients.
Gradually add the remaining ingredients (excluding the blueberries) to the dry ingredients.
Mix with a wooden spoon or spatula until just blended.
Add the blueberries to the mixture.
Lightly and quickly fold the blueberries into the batter. (Note: If using frozen blueberries, the batter may thicken. This is normal.)
Drop the batter into silicone liners, filling each to the rim.
Bake in a preheated oven at 350 degrees Fahrenheit for 25 to 30 minutes.
Allow the baked goods to cool completely before removing them from the silicone liners.
Store in a plastic container.
